Meet Scout.

I feel like a failure as a pet parent. When I introduced my family in my first post, I completely neglected to introduce you all to our cat, Scout! I've never been a "cat person" until this little furball came into our lives, and we truly believe God picked her for our family. So here's her story:

Shortly after moving from our apartment to our pet-friendly home, we decided we needed a pet (specifically a dog). I had recently discovered I was pregnant, and my mom was really cautioning me about bringing a pet into our family when we were already about to have the responsibility of being parents for the first time. So I decided to pray about it. I prayed that if God wanted us to have a pet, to please just send one to us somehow. I prayed about this for several days; however, I failed to mention that I wanted that pet to be a dog. 

The Sunday after I began praying for a pet, we arrived at church like usual an hour early so we could practice with our worship team (I sing and Jamie plays drums). Shortly after arriving, our preacher's wife told me I needed to come outside. Confused, I asked her why and she informed me that she heard meowing coming from the engine of our car. As soon as we walked outside, I saw a beautiful, pale gray cat hop down from underneath the engine of our car. I walked over to her, pet her a few times, and proceeded to tell her to go back to her home. I simply assumed that she had crawled up there since we had arrived, seeing as there were a lot of stray cats in the area. We all went back inside, proceeded with practice, our church service, and even a luncheon after church.

Three hours later when all of this had concluded, we walked out to leave and lo and behold, the cat was still sitting beside our car! Our preacher's wife informed us that she did not recognize the cat as one of the strays and brought up the idea that she could have gotten in the engine the previous night and actually ridden in it to church (approximately 3 miles!). 

We decided to take her home and post her on a classifieds page for our area via Facebook. We instantly fell in love with her and quickly realized she may have been the answer to our prayers. We discovered a few hours later, she actually belonged to a family a few doors down on our street. They were getting ready to move and decided they no longer wanted her, so she became ours! She's proof to us that God answers prayers, no matter how big or small. I also learned that if you aren't very specific, God may open a door you weren't quite expecting!

Jamie decided to name her Scout, which is very fitting since she is quite the explorer! Scout is a very quirky cat. She LOVES people and cuddling, chasing her tail, stalking insects, and hiding in random bags and boxes. She makes us laugh constantly! She is also a pretty good big sister to Charlotte. She was very loving when Charlotte was a newborn and enjoyed laying with us while I nursed. She's not so sure about her now that she is rolling around and invading her space, but I'm sure she will get used to it!

Just a little description of these (Left to right, top to bottom): 
1) When I do indoor photoshoots, she insists on trying out my setup. She was the perfect practice for last year's Christmas light pictures!

3) A cat hat. Because she can.
4) Never to be left out, Scout had to snuggle with us.
5) Staking her claim on Charlotte.
6) Enjoying some peace and quiet in her favorite bag. (Side note: The first time she hid in this, I couldn't see her at all. She then proceeded to attack my foot when I walked by. I almost peed myself.)
7) While waiting for the exterminator to spray our house for spiders, we had to wait outside. It was about 100 degrees outside, and she truly thought she could break back into the house for some AC!

Caffeine in a Cupcake. Yes PLEASE!

Ok. So the other night I was hanging out with my husband and had a sudden craving for coffee. I am more of a "I like a little coffee with my sugar and cream" kind of girl, and sadly we were out of creamer. Even more sad is that there are basically no coffee shops where we live. Yeah...NO STARBUCKS! So what was a girl to do??

Like all good homemakers, I had yet to clean out the coffee pot from the morning, so I had a couple cups of it leftover. So naturally I decided I should put the coffee into some cupcakes! As much as I love to use Pinterest to find recipes, I am making a big effort to create my own recipes. So I decided to just alter a basic cupcake recipe I use to create a cupcake flavored like my favorite coffee- Caramel Macchiato!

I was so excited about them, that I totally failed and didn't take pictures of the steps along the way. Hopefully I will be able to get my sweet tooth under control next time. Anyways, here is the picture and recipe! They were super easy and SO delicious! My husband and his friends raved over them for days!



Caramel Macchiato Cupcakes

2 sticks butter (softened)
2 cup brown sugar
4 eggs
1/2 cup milk
1/2 cup brewed coffee (Whatever kind you have will work!)
1 heaping tsp. baking powder
3 cups flour
2 tsp. caramel extract
1 tsp. vanilla extract
Pinch of salt ( I used sea salt, but regular salt works too)

Cream together butter, brown sugar, and eggs in a large bowl. Add remaining ingredients and mix thoroughly (I blended it with a hand mixer for about 1 minute). Fill cupcake tin with liners and then pour in batter until liners are between 1/2 and 2/3 of the way full. Bake at 350 degrees for 18-20 minutes. Remove from tins and allow to cool thoroughly before icing. Makes about 2 dozen cupcakes.

For icing, I stole Paula Deen's delicious caramel frosting recipe, and it was the perfect compliment to the cupcakes. Find the recipe HERE! 

(By the way, I did not use the optional walnuts that the recipe suggests. However, I think that chopped pecans would be a delicious addition to this recipe!)

Welcome One and ALL!

Goooood morning! So I was laying in bed last night and thought, "Ya know, I should start a blog." Mainly for my family and friends, but also as a resource to share my photography and yummy recipes! So this will definitely be a random blog. I'm sure you'll see lots of pictures of my baby. Get used to it. But she's adorable, so you shouldn't mind (And she really is precious....I'm not just biased). Here, I will prove it!


See! Adorable, right? Her name is Charlotte, by the way. Oh! And I'm Whitney. Perhaps it will be important for you to know who is writing this. So here is me (and my handsome husband Jamie):


Other than being a mommy to Charlotte, I also have a degree in Early Childhood Education. I taught pre-school last year and absolutely love getting to mold little minds. So why I am not doing that anymore? Because we are moving. Why? Because my husband is in the Air Force and Uncle Sam said so. We are off to Little Rock, Arkansas in a couple months to start a new chapter of our life there. We are so excited!

So, my family in a nutshell: Charlotte is the center of our universe, Jamie is in the Air Force, and I am a mommy, wife, and teacher. That's life as we know it. Sounds simple, but trust me, it gets interesting. Hope you all will stick around and see what all this blog has to offer!
